For years I’ve been wondering if there’s a way to make jam without pectin or refined sugar (or artificial sugar substitutes) and I’m excited to have finally cracked the code. Fruit plus date paste equals delicious refined sugar free strawberry jam with the perfect jammy texture and consistency. The date flavour is completely masked by the fruit and all you taste is sweet strawberry flavour. The date paste thickens the jam perfectly so the consistency really is spot on. This recipe works well with other fruits too, so feel free to substitute with whatever’s in season.

Refined Sugar Free Strawberry Jam Recipe

Ingredients:


4 cups of fresh strawberries, sliced

1/2 cup of date paste

Optional 1/2 teaspoon of lemon zest

Instructions:

Combine strawberries and date paste in a pot and simmer on low heat for approximately 90 minutes, stirring occasionally. Let cool and store the refined sugar free strawberry jam in an airtight container in the fridge for up to two weeks.
