Healthy whipped cream may sound like a bit of an oxymoron, but this healthier recipe for that rich dessert topping proves that isn’t so! Years ago some visitors brought over a lovely peach pie and a carton of heavy cream to make freshly whipped cream to serve with the pie. I didn’t have any sugar to put in the whipped cream but didn’t want to disappoint my guests, so I improvised and used maple syrup to sweeten the cream instead. It turned out great.
The other day it occurred to me that if maple syrup works well in whipped cream, maybe date paste would too. I gave it a try and it was delicious! Date paste is higher in fibre than maple syrup and contains plenty of vitamins, nutrients, and antioxidants so it seems like a healthier choice to me.
Use this whipped cream to top fresh fruit, pies or instead of frosting on cakes or cupcakes. Add a dollop of this healthy whipped cream to this chocolate cake. You can also add a couple of teaspoons of cocoa powder and turn it into chocolate whipped cream.
Healthy Whipped Cream
- 1 cup 35% cream
- 1 teaspoon vanilla extract
- 4 tablespoons date paste see my date paste recipe for instructions
- Combine all ingredients and use an electric mixer to beat at medium speed for approximately 8 minutes or until a whipped cream texture is achieved (or whisk by hand in a large bowl if you have the patience and arm strength!).
- Makes 2 cups of healthy whipped cream.
