Low Carb Spiralized Zucchini Noodles With Pesto

Spiralized zucchini noodles with spinach pesto are a great option when you’re craving a rich bowl of pasta but don’t want to consume all those carbs. This low carb keto diet friendly pesto sauce has plenty of flavour from the basil, Parmesan cheese, and fresh garlic, and it’s quite nutrient dense due to the baby spinach and walnuts. 


Low Carb Spiralized Zucchini Noodles With Spinach Pesto Recipe

Ingredients:

3 cups baby spinach leaves

1/2 cup fresh basil leaves

1/2 cup extra virgin olive oil

1/2 teaspoon salt

1/2 teaspoon pepper

1 1/2 cloves of garlic

1/2 cup Parmesan cheese (you can omit this for a dairy free version and the result is still delicious)

3 cups spiralized zucchini

Instructions:

Sautée spiralized zucchini until tender in a pan with a little extra virgin olive oil on medium heat. Add all the other ingredients to a blender or food processor and blend/process until smooth. Toss the zucchini noodles with the pesto and garnish with extra Parmesan cheese and dried chili peppers.
