Paleo Cranberry Muffins

Ingredients

  • 6 eggs
  • 1/3 cup extra virgin olive oil
  • 1/2 cup raw honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange zest
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsweetened applesauce
  • 1 cup coconut flour
  • 1 teaspoon baking soda
  • 1 1/2 cups cranberries (frozen or fresh)

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Add the eggs, extra virgin olive oil, raw honey, vanilla extract, orange zest, cinnamon and applesauce to a large mixing bowl and whisk well.
  • Add the coconut flour and baking soda and mix until well combined.
  • Fold in the cranberries and then spoon the batter into 12 paper lined muffin cups.
  • Bake at 350 degrees Fahrenheit for 33 minutes.
  • Makes 12 paleo cranberry muffins.

Notes

  • You can double the amount of orange zest if you prefer a true cranberry orange muffin.
