Add the fresh lime juice and 2 teaspoons of fresh lime zest to a bowl (reserve the remaining lime zest for later).
Add 1 cup of chopped dark chocolate to a pot on the stove set to low heat (reserve the remaining chocolate for later).
Cook, stirring often, until the chocolate has melted completely, then immediately remove the pot from the heat.
Transfer the melted chocolate to the bowl of lime juice and zest, then mix until smooth.
Chill the bowl of chocolate lime mixture in the fridge for 25 minutes.
Mix well before continuing to chill for an additional 10 minutes, then mix once more.
Use your hands to shape the chocolate lime mixture into 12 evenly sized balls (about 2 teaspoons per ball), and place them on a sheet pan lined with parchment paper or a silicone baking mat. I recommend wearing kitchen gloves to make this process easy and mess free.
Add the remaining 3/4 cup chopped dark chocolate to a pot on the stove set to low heat.
Cook, stirring often, until the chocolate has melted completely, then immediately remove from the heat.
Transfer the melted chocolate to a small bowl.
Add one of the chocolate lime balls to the bowl of melted dark chocolate, then gently stir to coat it completely.
Use a fork to lift the chocolate lime ball out of the bowl of melted chocolate, allowing any excess chocolate to drip back into the bowl, then place it on the sheet pan lined with parchment paper or a silicone baking mat.
Immediately add a small sprinkle of the remaining fresh lime zest on top.
Repeat steps 11-13 with the remaining chocolate lime balls.
Place the pan of lime chocolates in the fridge to harden for at least one hour before serving.
