- 1 cup toasted pecan halves, divided
- 3/4 cup chopped dark chocolate (or substitute any type of chocolate you prefer)
Add the chopped dark chocolate to a pot on the stove set to low heat.
Cook, stirring constantly, until the chocolate has melted and there are no solid lumps of chocolate remaining, then immediately remove the pot from the heat.
Add 1/2 cup of toasted pecan halves to the pot of melted chocolate, then gently stir to coat them completely (reserve the other 1/2 cup of pecan halves).
Use a fork to lift a pecan half out of the pot of melted chocolate and place it on a plate lined with parchment paper or a silicone baking mat.
Place one of the reserved pecan halves (not coated in chocolate) directly on top of the chocolate coated pecan half.
Use a spoon to scoop out a small amount of melted chocolate from the pot and drizzle it on top of the two stacked pecan halves.
Repeat steps 4-6 with the rest of the pecans.
Place the plate of chocolate pecans in the fridge to harden for at least 45 minutes before serving.
