Equipment

  • Parchment paper or silicone baking mat

Ingredients

  • 1 cup toasted pecan halves, divided
  • 3/4 cup chopped dark chocolate (or substitute any type of chocolate you prefer)

Instructions

  • Add the chopped dark chocolate to a pot on the stove set to low heat.
  • Cook, stirring constantly, until the chocolate has melted and there are no solid lumps of chocolate remaining, then immediately remove the pot from the heat.
  • Add 1/2 cup of toasted pecan halves to the pot of melted chocolate, then gently stir to coat them completely (reserve the other 1/2 cup of pecan halves).
  • Use a fork to lift a pecan half out of the pot of melted chocolate and place it on a plate lined with parchment paper or a silicone baking mat.
  • Place one of the reserved pecan halves (not coated in chocolate) directly on top of the chocolate coated pecan half.
  • Use a spoon to scoop out a small amount of melted chocolate from the pot and drizzle it on top of the two stacked pecan halves.
  • Repeat steps 4-6 with the rest of the pecans.
  • Place the plate of chocolate pecans in the fridge to harden for at least 45 minutes before serving.

Notes

  • Store these chocolate covered pecans in an airtight container in the fridge for up to seven days or in the freezer for up to six months.
