I prefer to use dark chocolate when making these pecans, but you can substitute any type of chocolate you prefer.

I like to use toasted pecans in this recipe because I love the depth of flavor and crunchy texture the toasting process adds to the nuts. You can substitute raw pecans if you prefer.

How to Make Dark Chocolate Covered Pecans

Start by adding the chopped dark chocolate to a pot on the stove set to low heat. Cook, stirring constantly, until the chocolate has melted and there are no solid lumps of chocolate remaining, then immediately remove the pot from the heat.

Add 1/2 cup of toasted pecan halves to the pot of melted chocolate, then gently stir to coat them completely (reserve the other 1/2 cup of pecan halves).

Use a fork to lift a pecan half out of the pot of melted chocolate and place it on a plate lined with parchment paper or a silicone baking mat.

Place one of the reserved pecan halves (not coated in chocolate) directly on top of the chocolate coated pecan half.

Use a spoon to scoop out a small amount of melted chocolate from the pot and drizzle it on top of the two stacked pecan halves.

Repeat that process with the rest of the pecans, then place the plate of chocolate pecans in the fridge to harden for at least 45 minutes before serving.
