Chocolate Covered Apricots Recipe

- 18 dried apricots
- 3/4 cup chopped dark chocolate (or substitute chocolate chips or any type of chocolate you prefer)
- Optional toppings: chopped nuts, pumpkin seeds, edible dried flowers, or sea salt
Add the chopped dark chocolate to a pot on the stove set to low heat.
Cook, stirring constantly, until the dark chocolate has melted, then immediately remove the pot from the heat.
Transfer the melted chocolate to a bowl.
Dip a dried apricot in the melted chocolate, ensuring that approximately two-thirds of it is coated, then place it on a large plate or sheet pan lined with parchment paper or a silicone baking mat.
Immediately sprinkle on any toppings you like (it’s important to do this while the melted chocolate is still wet so that the toppings adhere properly).
Repeat steps 4-5 with the remaining dried apricots.
Place the plate or sheet pan of chocolate apricots in the fridge for at least 60 minutes before serving.
- Store these chocolate covered apricots in an airtight container in the fridge for up to two weeks. If substituting fresh apricots, reduce the storage time to a maximum of three days in the fridge.
