I like to use chopped dark chocolate when making these treats. You can substitute chocolate chips or any type of chocolate you prefer.
I like to use dried apricots when making this recipe, but you could substitute fresh apricots, in which case you can slice them in quarters before dipping them in the chocolate.
Optional toppings for these chocolate apricots include chopped nuts such as pecans, pistachios, macadamia nuts, pine nuts, or any other type of nuts you like. Or for a nut-free topping, go for pumpkin seeds or sunflower seeds.
Edible dried flowers such as rose petals or lavender buds make lovely toppings for these treats too (just make sure they are labelled food grade or edible). Or keep it simple with just a sprinkle of sea salt as a topping. I like to make a colorful assortment with several different toppings, especially if I’m giving these as gifts.
How to make chocolate covered apricots
Start by adding the chopped dark chocolate to a pot on the stove set to low heat. Cook, stirring constantly, until the dark chocolate has melted, then immediately remove the pot from the heat. Next you’ll transfer the melted chocolate to a bowl.
Dip a dried apricot in the melted chocolate, ensuring that approximately two-thirds of it is coated, then place it on a large plate or sheet pan lined with parchment paper or a silicone baking mat.
Immediately sprinkle on any toppings you like (it’s important to do this while the melted chocolate is still wet so that the toppings adhere properly).
Repeat this process with the remaining dried apricots.
Place the plate or sheet pan of chocolate apricots in the fridge for at least 60 minutes before serving.
