Ingredients

  • 8 ounces dried noodles (approximately 0.5 pounds or 226 grams)
  • 1/4 cup smooth almond butter
  • 1/4 cup water
  • 2 tablespoons soy sauce (or substitute tamari)
  • 1/2 teaspoon garlic powder (or substitute 1 teaspoon chopped garlic)
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili flakes (optional)
  • Garnish with chopped green onions and sesame seeds (optional)

Instructions

  • Begin to cook 8 ounces dried noodles according to the instructions on the package.
  • While the noodles are cooking, add 1/4 cup smooth almond butter, 1/4 cup water, 2 tablespoons soy sauce, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and (optional) 1/4 teaspoon chili flakes to a bowl.
  • Use a whisk to mix until smooth.
  • When the noodles are finished cooking, drain them, then toss with the almond butter sauce.
  • Garnish with chopped green onions and sesame seeds before serving, if desired.

Notes

  • Store these noodles in an airtight container in the fridge for up to three days.
  • For a complete meal, serve with steamed or sautéed vegetables and a protein source such as tofu.
