Black Bean Fudge Recipe

This delicious chocolate black bean fudge is a nutrient-packed treat. It has a satisfying, melt-in-your-mouth texture and the flavor of the black beans isn't noticeable at all.

Equipment

  • Food processor or blender.
  • 9 inch loaf pan
  • Parchment paper

Ingredients

  • 1 1/2 cups chopped dark chocolate
  • 1 cup drained and rinsed canned black beans (or substitute cooked dried black beans)
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

Instructions

  • Add 1 1/2 cups chopped dark chocolate to a pot on the stove set to low heat.
  • Cook, stirring constantly until the chocolate has melted, then immediately remove the pot from the heat.
  • Add 1 cup drained and rinsed canned black beans, the melted chocolate, 2 tablespoons pure maple syrup, and 1 teaspoon pure vanilla extract to a food processor or blender.
  • Blend until smooth, scraping down the sides of the food processor or blender as needed.
  • Transfer the chocolate black bean mixture to a medium sized loaf pan lined with parchment paper, then use a flat spatula or the back of a spoon to spread in an even layer.
  • Refrigerate for at least 1 hour before slicing and serving.

Notes

  • Store this fudge in an airtight container in the fridge for up to five days.
  • There's no need to specifically purchase canned black beans with no salt added, because the hint of saltiness from the black beans complements the other flavors in this fudge. If your beans don’t contain any added salt, I recommend adding a pinch of salt to round out the flavors. You can taste the chocolate bean mixture before transferring it to the loaf pan and adjust the salt to your taste.
