Chocolate Covered Pineapple Recipe
These chocolate covered pineapple rings are one of my favorite nutritious treats. They're easy to make and can be prepared in advance. Chocolate and pineapple is a surprisingly delicious flavor combination!

- 1 peeled and cored pineapple
- 1 2/3 cups chopped dark chocolate
- Optional toppings: fresh lime zest, shredded coconut, or finely chopped macadamia nuts
Slice 1 peeled and cored pineapple evenly into six rings.
Pat the pineapple rings dry using a clean kitchen towel or paper towel.
Add 1 2/3 cups chopped dark chocolate to a microwave-safe bowl, then heat at 20 second increments, stirring in between, until melted. Alternatively, you can melt the chocolate in a pot on the stove set to low heat, stirring constantly until melted.
Add one of the pineapple rings to the bowl of melted chocolate, then use two forks to gently rotate and coat the ring in chocolate.
Use the forks to lift the pineapple ring up out of the bowl and allow any excess chocolate to drip back into the bowl before placing the pineapple on a sheet pan or large plate lined with parchment paper.
Add the optional toppings while the chocolate is still wet.
Repeat steps 4-6 with the rest of the pineapple.
Place the sheet pan or plate in the fridge for at least 30 minutes or until the chocolate has fully hardened.
