- 1/3 cup ground flaxseed
- 1/3 cup cold water
- 1 1/2 cups chopped dark chocolate (approximately 9 oz or 255 g. Or for a lower-carb option use keto-friendly chocolate such as this monk fruit chocolate)
- 1/4 teaspoon salt
Add 1/3 cup ground flaxseed and 1/3 cup cold water to a mixing bowl, mix well, then let rest for 10 minutes.
Melt 1 1/2 cups chopped dark chocolate using your preferred method:Stovetop: add the chopped chocolate to a small pot over low heat. Stir frequently until just melted, then immediately remove from the heat.Microwave: add the chopped chocolate to a microwave-safe bowl. Heat in 20-second bursts, stirring between each, until melted. Add 1/4 teaspoon salt to the melted chocolate, then mix well.
Transfer the melted chocolate to the mixing bowl with the flaxseed mixture, then mix just until incorporated and thickened (don’t overmix).
Transfer to a 9-inch loaf pan lined with parchment paper, then spread in an even layer.
Refrigerate for 1 hour or until firm before removing from the pan and slicing into 12 pieces.
