Ingredients

  • 1/3 cup ground flaxseed
  • 1/3 cup cold water
  • 1 1/2 cups chopped dark chocolate (approximately 9 oz or 255 g. Or for a lower-carb option use keto-friendly chocolate such as this monk fruit chocolate)
  • 1/4 teaspoon salt

Instructions

  • Add 1/3 cup ground flaxseed and 1/3 cup cold water to a mixing bowl, mix well, then let rest for 10 minutes.
  • Melt 1 1/2 cups chopped dark chocolate using your preferred method:
    Stovetop: add the chopped chocolate to a small pot over low heat. Stir frequently until just melted, then immediately remove from the heat.
    Microwave: add the chopped chocolate to a microwave-safe bowl. Heat in 20-second bursts, stirring between each, until melted.
  • Transfer the melted chocolate to the mixing bowl, add 1/4 teaspoon salt, then mix until incorporated and thickened.
  • Transfer the mixture to a 9-inch loaf pan lined with parchment paper, then spread in an even layer.
  • Refrigerate for 1 hour or until firm before removing from the pan and slicing into 12 pieces.

Notes

  • Store in an airtight container in the fridge for up to five days or in the freezer for up to three months. Thaw in the fridge before serving.
