These homemade lemon popsicles have just the right balance of sweet and tart flavors. They're an easy, budget-friendly, summertime frozen treat that also happens to be vegan, paleo, and refined sugar free.

Ingredients

  • 1 1/2 cups cold water
  • 1/2 cup fresh squeezed lemon juice
  • 1/4 cup maple syrup
  • 1 teaspoon lemon zest

Instructions

  • Add the water, fresh squeezed lemon juice, maple syrup, and lemon zest to a pitcher.
  • Mix well.
  • Pour the mixture into a popsicle mold, divided evenly into six portions, then add the popsicle sticks.
  • Freeze for at least five hours or until completely solid before serving.

Notes

  • After removing the popsicles from the popsicle mold, either serve them immediately or store them in an airtight container or freezer bag for up to 1 month.
  • For a creamy version of these popsicles, replace 1 cup of water with coconut milk.
  • For a lower sugar version of these popsicles, reduce the maple syrup to 4-6 tablespoons or to taste.
