- 1/3 cup cocoa powder
- 3/4 cup boiling water
- 1 teaspoon vanilla extract
- 1 teaspoon pure liquid monk fruit sweetener
- 1/4 teaspoon salt
- 1 cup creamy natural peanut butter (or any other nut butter or seed butter)
Add 1/3 cup cocoa powder, 3/4 cup boiling water, 1 teaspoon vanilla extract, 1 teaspoon pure liquid monk fruit sweetener, and 1/4 teaspoon salt to a large mixing bowl, then whisk well to dissolve the cocoa powder.
Add 1 cup creamy natural peanut butter, then use a spoon to mix until incorporated. If the mixture seems too dry (this can happen if the peanut butter is thicker near the bottom of the jar), add more boiling water 1 tablespoon at a time until it’s spreadable.
Use immediately to frost a 9-inch single layer cake or 12 cupcakes.
