Roasted Garlic Confit

This roasted garlic confit recipe is easy to make and delicious. The cloves become spreadable with a mellow, nutty flavor.

Ingredients

  • 2 cups garlic cloves (peeled)
  • 2 cups extra virgin olive oil
  • 1 teaspoon dried rosemary or 2 sprigs fresh rosemary (or substitute thyme, oregano, or basil)

Instructions

  • Preheat the oven to 300 degrees Fahrenheit.
  • Add the peeled garlic cloves, extra virgin olive oil, and rosemary to an eight inch baking dish.
  • Bake at 300 degrees Fahrenheit for one hour and fifteen minutes or until the garlic cloves are golden brown.
  • Use a slotted spoon to remove the garlic cloves from the oil and transfer them to a bowl for serving.
  • Serve warm or at room temperature.

Notes

  • Optional additions: add a pinch of crushed red chili flakes, if desired.
  • Storage: Let this roasted garlic confit cool to room temperature, then store in an airtight container in the fridge for up to seven days.
  • You can store the oil in the fridge for up to seven days and use it as a cooking oil.
