Cashew Lime Popsicles Recipe (Tastes Like Key Lime Pie)
These creamy cashew lime popsicles have just the right balance of sweet, tart, and tangy flavors. These dairy-free, vegan frozen treats taste like key lime pie, but in popsicle form.

- 1 1/2 cups unsalted cashews (either roasted or raw)
- 1 cup plus 2 tablespoons water
- 1/4 cup plus 2 tablespoons lime juice (for the best results, use fresh or bottled juice that’s not from concentrate. If using fresh, you’ll need about 3 medium limes)
- 1/4 cup plus 2 tablespoons pure maple syrup (or substitute sugar-free liquid sweetener to taste and increase the water accordingly to compensate for any missing liquid volume)
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon sea salt
Add 1 1/2 cups unsalted cashews, 1 cup plus 2 tablespoons water, 1/4 cup plus 2 tablespoons lime juice, 1/4 cup plus 2 tablespoons pure maple syrup, 1 teaspoon pure vanilla extract, and 1/4 teaspoon sea salt to a high-powered blender (see notes below for instructions if your blender is less powerful).
Blend until smooth and creamy, scraping down the sides of the blender as needed.
Pour the mixture into a popsicle mold, dividing it evenly between 6 sections.
Add the popsicle sticks, then freeze for at least 5 hours or until firm.
