I tested several versions of these creamy cashew lime popsicles to find a deliciously satisfying balance of sweet, tart, and tangy flavors with just the right creamy texture. These dairy-free and vegan frozen treats taste like key lime pie, but in popsicle form. Blended cashews give these popsicles their creamy texture without the need for dairy. I like to use roasted cashews, but raw works too.

I recommend using either fresh lime juice or bottled lime juice labeled “not from concentrate”. The concentrated bottled stuff isn’t quite as delicious, but does still work in a pinch if that’s what’s available. If using fresh, you’ll need about 3 medium limes.

I sweetened these cashew popsicles with pure maple syrup. For a lower-sugar version, you can substitute any type of sugar-free liquid sweetener you like, to taste. Just increase the water accordingly to make up for any missing liquid in that case.

Vanilla enhances the other flavors in these popsicles nicely. I recommend using pure vanilla extract as opposed to artificial vanilla flavoring if possible.

How to Make Cashew Lime Popsicles

Add the cashews, water, lime juice, pure maple syrup, vanilla extract, and sea salt to a high-powered blender (or if your blender is less powerful, soak the cashews in boiling water for 1 hour, then drain and discard the soaking liquid before adding the cashews to the blender). Blend until smooth and creamy, scraping down the sides of the blender as needed.

Pour the mixture into a popsicle mold, dividing it evenly between 6 sections. Add the popsicle sticks, then freeze for at least 5 hours or until firm.
