Equipment

  • Sheet pan or large plate
  • Parchment paper

Ingredients

  • 1 cup chopped dark chocolate (approximately 6 oz, or substitute any type of chocolate you prefer)
  • 1 cup unsalted macadamia nuts (I prefer roasted, but raw works too; either whole or pieces)
  • Optional topping: sea salt

Instructions

  • Add 1 cup chopped dark chocolate to a pot on the stove set to low heat.
  • Cook, stirring constantly until melted, then immediately remove from the heat.
  • Add 1 cup unsalted macadamia nuts to the pot, then stir to coat them completely in melted chocolate.
  • Scoop out one tablespoon of chocolate coated macadamia nuts, then place on a sheet pan or large plate lined with parchment paper or a silicone baking mat.
  • Repeat with the rest of the chocolate macadamia nut mixture (you should end up with about 18 clusters).
  • Add a small sprinkle of sea salt on top of each cluster, if desired.
  • Place the sheet pan or plate in the fridge for at least 45 minutes, or until the chocolate has fully hardened, before serving.

Notes

  • Store in the fridge for up to two weeks or in the freezer for up to three months. Thaw in the fridge before serving.
