Dark Chocolate Covered Cashews Recipe

These dark chocolate covered cashews are an easy and delicious treat. They're a lovely addition to a dessert table and also make great homemade gifts for any occasion.

Equipment

  • Parchment paper or silicone baking mat

Ingredients

  • 1 cup roasted, unsalted cashews
  • 3/4 cup chopped dark chocolate
  • Optional topping: sea salt

Instructions

  • Add the chopped dark chocolate to a pot on the stove set to low heat.
  • Cook, stirring constantly, until the chocolate has melted, then immediately remove the pot from the heat.
  • Add the cashews to the pot of melted dark chocolate, then gently stir to coat the cashews completely.
  • Spoon a heaping tablespoon of the melted chocolate and cashew mixture onto a sheet pan or large plate lined with parchment paper or a silicone baking mat.
  • Immediately add a small sprinkle of sea salt on top, if desired.
  • Repeat steps 4-5 with the rest of the chocolate and cashew mixture.
  • Place the sheet pan or plate in the fridge to let the chocolate harden for at least an hour before serving.

Notes

  • Store these dark chocolate covered cashews in an airtight container in the fridge for up to two weeks.
