- 1 cup roasted, unsalted cashews
- 3/4 cup chopped dark chocolate
- Optional topping: sea salt
Add the chopped dark chocolate to a pot on the stove set to low heat.
Cook, stirring constantly, until the chocolate has melted, then immediately remove the pot from the heat.
Add the cashews to the pot of melted dark chocolate, then gently stir to coat the cashews completely.
Spoon a heaping tablespoon of the melted chocolate and cashew mixture onto a sheet pan or large plate lined with parchment paper or a silicone baking mat.
Immediately add a small sprinkle of sea salt on top, if desired.
Repeat steps 4-5 with the rest of the chocolate and cashew mixture.
Place the sheet pan or plate in the fridge to let the chocolate harden for at least an hour before serving.
