Maple Mustard Tofu Recipe

- 2 tablespoons Dijon mustard (or substitute any type of mustard you prefer)
- 2 tablespoons pure maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried thyme
- 1 block extra firm tofu (about 14 oz/397 g)
Add 2 tablespoons Dijon mustard, 2 tablespoons pure maple syrup, 1/2 teaspoon salt, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/4 teaspoon dried thyme to a small bowl, then mix well.
Tear 1 block extra firm tofu into bite-sized pieces and add them to a container (I don’t press the tofu first).
Pour about half of the maple mustard mixture onto the tofu pieces and use your hands to gently coat them. Reserve the rest of the maple mustard mixture in the fridge.
Cover the container and transfer to the fridge to let the tofu marinate for at least 2 hours (overnight is fine too).
After marinating, preheat the oven to 375 degrees Fahrenheit.
Pour the rest of the maple mustard mixture onto the tofu pieces and use your hands to gently coat them.
Transfer the tofu to a lightly greased sheet pan, spreading the pieces in a single layer.
Bake uncovered for 30-35 minutes or until golden and caramelized.

Store in an airtight container in the fridge for up to three days. Reheat to your desired temperature in the oven or in a pan on the stove. It’s delicious cold as well, and makes a nice addition to salads, wraps, or sandwiches.
