Ingredients

  • 4 cups fresh pineapple, chopped into bite-sized pieces (approximately 1 medium pineapple)
  • 2 tablespoons melted coconut oil
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Add 4 cups fresh pineapple, chopped into bite-sized pieces, 2 tablespoons melted coconut oil, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, and 1/4 teaspoon salt to a sheet pan or large baking dish lined with parchment paper.
  • Toss the pineapple with your hands until evenly coated with the spices and oil, then spread them in a single layer on the pan.
  • Bake for 40 minutes or until golden brown, stirring halfway through to ensure even browning.
