This oven-roasted pineapple is warmly spiced and juicy with golden-brown edges. It will make your kitchen smell heavenly too. Enjoy this as a simple dessert, or use it as a topping for pancakes or waffles. Give it a try if you’re in the mood for a fruit dessert, like these simple baked berries, which are another delicious option.
Ingredients and Substitutions
Fresh pineapple works best in this recipe. I don’t recommend using frozen or canned pineapple in this particular dish.

I spiced this dish with ground cinnamon and ginger. You could add a small pinch of nutmeg or cloves too if you like.
A small amount of salt enhances the other flavors in this dish. You can omit the salt if you prefer.
I used coconut oil in this recipe, but you can substitute any type of oil you prefer.
How to Make Oven-Roasted Pineapple
Start by preheating the oven to 400 degrees Fahrenheit. Next you’ll add the chopped pineapple, melted coconut oil, cinnamon, ginger, and salt to a sheet pan or large baking dish lined with parchment paper.
Toss the pineapple with your hands until evenly coated with the spices and oil, then spread them in a single layer on the pan.

Bake for 40 minutes or until golden brown, stirring halfway through to ensure even browning.
