- 3 cups roughly chopped ripe tomatoes (any type)
- 1 cup raw unsalted cashews
- 1 cup water
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional addition: 1 cup leafy greens such as kale or spinach
- Optional garnish: finely chopped fresh chives or basil
Add 1/2 of 1 small garlic clove, 3 cups roughly chopped ripe tomatoes, 1 cup raw unsalted cashews, 1 cup water, 3/4 teaspoon salt, and 1/8 teaspoon black pepper (plus any optional leafy greens) to a high-powered blender.
