Ingredients

  • 4 cups lion’s mane mushrooms, roughly chopped into bite-sized pieces
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Add 4 cups lion’s mane mushrooms, roughly chopped into bite-sized pieces, 2 tablespoons extra virgin olive oil, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon dried thyme, 1/4 teaspoon dried rosemary, 1/4 teaspoon salt, and 1/8 teaspoon black pepper to a sheet pan or large baking dish.
  • Toss the mushrooms with your hands until evenly coated with the oil and spices, then spread them out in a single layer on the pan.
  • Bake for 20-25 minutes or until golden brown, stirring about halfway through to ensure even browning.

  • Store in an airtight container in the fridge for up to three days.
