Might sound a bit odd, but they’re truly irresistible. They’re a bit shaggy looking when raw—kind of like a lion’s mane, hence the name. I love their tender yet meaty texture.

I like to use extra virgin olive oil when making this dish, but you can substitute any type of oil you prefer.

These mushrooms are spiced with garlic powder, onion powder, dried thyme, and dried rosemary. You can substitute fresh chopped garlic and fresh herbs if you prefer. If using fresh, I recommend doubling the amounts.

How to Make Roasted Lion’s Mane Mushrooms

Start by preheating the oven to 400 degrees Fahrenheit. Next you’ll add the chopped lion’s mane mushrooms, olive oil, garlic powder, onion powder, thyme, rosemary, salt, and black pepper to a sheet pan or large baking dish.

Toss the mushrooms with your hands until evenly coated with the oil and spices, then spread them out in a single layer on the pan.

Bake for 20-25 minutes or until golden brown, stirring about halfway through to ensure even browning.
