Preheat the oven to 400 degrees Fahrenheit.
Add 1 1/2 cups spelt flour and 1/2 teaspoon salt to a mixing bowl, then mix well.
Add 1/2 cup cold water and 1/4 cup extra virgin olive oil, then use your hands to mix the ingredients and knead until a firm dough is formed.
Use your hands to roll the dough into 24 evenly sized balls (about 1 tablespoon of dough per ball) and place them, evenly spaced, on two sheet pans lined with parchment paper (12 balls per sheet pan).
Wet your fingers with cold water (to prevent sticking), then use your fingers to flatten the dough balls into circles (the flatter the better).
Prick each cracker with a fork several times.
Bake the crackers at 400 degrees Fahrenheit for 23 minutes or until golden brown.
Let the crackers cool completely before removing from the pan and serving (they will get crispier as they cool off).
