Equipment

  • Sheet pans
  • Parchment paper

Ingredients

  • 1 1/2 cups spelt flour
  • 1/2 teaspoon salt
  • 1/2 cup cold water (plus some more cold water in a separate bowl to wet your fingers with when forming the crackers)
  • 1/4 cup extra virgin olive oil

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Add 1 1/2 cups spelt flour and 1/2 teaspoon salt to a mixing bowl, then mix well.
  • Add 1/2 cup cold water and 1/4 cup extra virgin olive oil, then use your hands to mix the ingredients and knead until a firm dough is formed.
  • Use your hands to roll the dough into 24 evenly sized balls (about 1 tablespoon of dough per ball) and place them, evenly spaced, on two sheet pans lined with parchment paper (12 balls per sheet pan).
  • Wet your fingers with cold water (to prevent sticking), then use your fingers to flatten the dough balls into circles (the flatter the better).
  • Prick each cracker with a fork several times.
  • Bake the crackers at 400 degrees Fahrenheit for 23 minutes or until golden brown.
  • Let the crackers cool completely before removing from the pan and serving (they will get crispier as they cool off).

Notes

  • Store these spelt crackers in an airtight container at room temperature for up to five days.
  • Optional additions include 1/2 teaspoon of dried herbs or 1 teaspoon of sesame seeds.
