Tahini Pasta Recipe

- 3/4 pounds pasta (approximately 340 grams)
- 1/2 cup tahini
- the juice and zest of 1 lemon
- 1 chopped garlic clove
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cooking water from the pasta
- Optional garnish: chopped fresh basil or parsley
Begin cooking 3/4 pounds pasta according to the package instructions.
While the pasta is cooking, add 1/2 cup tahini, the juice and zest of 1 lemon, 1 chopped garlic clove, 3/4 teaspoon salt, and 1/4 teaspoon black pepper to a large mixing bowl and mix well.
When the pasta is almost done cooking, remove 1/2 cup cooking water from the pasta (plus a little extra if your tahini is on the drier side).
Gradually whisk the cooking water into the tahini mixture until the sauce is smooth and creamy.
Once the pasta is cooked and drained, toss it with the tahini sauce until evenly coated.
Garnish with chopped fresh basil or parsley (optional).
- When the pasta is almost finished cooking, remember to reserve 1/2 cup of cooking water before draining the pasta.
- If you notice that your tahini is a bit dry (this sometimes happens when you’re nearing the end of the jar if you haven’t stirred it thoroughly before each use) then add a bit more than 1/2 cup of pasta water in order to achieve your desired consistency.
- Store in an airtight container in the fridge for up to five days.
