Carrot Juice Smoothie

This carrot juice smoothie is packed with nutrients. It’s a great way to round out your nutritional intake for the day, especially if you need something you can drink on-the-go. This flavor-loaded smoothie made with carrot juice is sweet, creamy, and satisfying.

Ingredients and Substitutions

Carrot juice is exceptionally high in beta carotene, which your body can convert to vitamin A as needed. I love using carrot juice in smoothies instead of milk or other liquids. It adds tons of delicious, slightly earthy flavor in addition to plenty of nutrients.

I like to use a sweet variety of apple such as Golden Delicious, Honeycrisp, or Gala when making this smoothie. But tart varieties such as Granny Smith are perfect if you prefer to keep this smoothie a little lower in sugar.

Banana add creaminess to the smoothie. Choose a riper banana for extra sweetness or a less ripe banana for a lower sugar option.

I like to add a pinch of cinnamon to this smoothie. It complements the other flavors perfectly. You can omit the cinnamon if you prefer, or substitute other spices. Ground ginger, turmeric, or even a pumpkin pie spice blend would be good alternatives.

How to Make a Carrot Juice Smoothie

Peel the banana, break it into pieces, and add it to a blender. Next you’ll roughly chop the apple, removing the core, and add it to the blender. Then add the carrot juice and optional ground cinnamon to the blender.

Storage

Store this smoothie in the fridge for up to three days. Stir immediately before serving.
