These dark chocolate peanut clusters are perfect when youโre in the mood for a simple and nutritious treat. They have a satisfying crunch and a nice balance of sweet and salty flavors.
Ingredients
I like to use chopped dark chocolate when making these treats, but you can substitute any type of chocolate you like. Or if you prefer to save a little time by skipping the step of chopping the chocolate, you can substitute chocolate chips instead.
I like to use roasted salted peanuts in this recipe. The combination of the subtle sweetness from the dark chocolate and the saltiness of the peanuts is so satisfying.
You can substitute unsalted peanuts if you prefer a less salty version of these treats. Or if you only have unsalted peanuts but still want that salty-sweet flavor, you can add a small sprinkle of sea salt on top of each cluster before transferring them to the fridge.
I donโt recommend substituting raw peanuts because the roasting process enhances both the texture and flavor of these treats.
How to make dark chocolate peanut clusters
Start by adding the chopped dark chocolate to a pan on the stove set to low heat. Cook, stirring constantly until the chocolate has melted, then immediately remove the pan from the heat.
Add 3/4 cup of peanuts to the pan of melted chocolate (reserve the remaining 3 tablespoons for later). Stir to coat the peanuts completely in the melted chocolate.
Scoop out one heaping teaspoon of the peanut chocolate mixture and place it on a sheet pan lined with parchment paper or a silicone baking mat.
Immediately add a sprinkle of plain peanuts on top of the chocolate coated peanuts.
Repeat this process with the rest of the chocolate peanut mixture (you should end up with approximately 20 clusters).
Place the sheet pan of peanut chocolate clusters in the fridge to chill for at least one hour before serving.
Storage
Store these treats in an airtight container in the fridge for up to two weeks, or in the freezer for up to three months. Thaw in the fridge or at room temperature before serving.
