Ingredients and Substitutions
I like to use roasted, salted pistachios when making this smoothie because I love that sweet and salty flavor combination. You can use unsalted pistachios if you prefer. Or add a small pinch of sea salt to the smoothie if you want that sweet and salty combination but only have unsalted pistachios.

I sweetened this smoothie with a couple of Medjool dates. You can substitute any type of date you prefer. I’m partial to Medjool because they’re particularly sweet, and their moist texture helps them blend up nicely.
Vanilla extract enhances the other flavors in this smoothie. You can substitute a couple of tablespoons of cocoa powder if you prefer a chocolate version instead. I prefer vanilla because it doesn’t overpower the flavor of the pistachios in this smoothie at all.
How to Make This Pistachio Smoothie
Start by adding the pistachios to a high-powered blender. Next you’ll remove the pits from the dates, then add them to the blender. Add the vanilla extract and milk to the blender.
Blend until smooth.

- 1/4 cup shelled salted pistachios (or substitute unsalted pistachios)
- 2 Medjool dates (or substitute any type of date you prefer)
- 1/2 teaspoon pure vanilla extract
- 1 cup unsweetened milk of choice (I used almond milk)
Instructions
- Add 1/4 cup shelled salted pistachios to a high-powered blender.
- Remove the pits from 2 Medjool dates, then add them to the blender.
- Add 1/2 teaspoon pure vanilla extract and 1 cup unsweetened milk of choice to the blender.
- Blend until smooth.
