These strawberry truffles are one of my favorite homemade treats for Valentine’s Day, Christmas, or any other special occasion. They have a rich strawberry filling coated with a crunchy dark chocolate shell. Ingredients and Substitutions
This recipe calls for fresh strawberries. Alternatively you can substitute frozen strawberries, in which case you should thaw them first, then drain and discard any liquid they release.

I prefer to use dark chocolate chips or chopped dark chocolate when making these truffles. I haven’t tried substituting other types of chocolate, so for the best results I recommend sticking with dark.
I like to garnish these truffles with a sprinkle of freeze-dried strawberry powder. This ingredient might be tricky to find at grocery stores but it’s easy to purchase online. You can omit this topping if you prefer, but I think it’s a nice touch for a pretty presentation, especially if you’re giving these as gifts.
How to Make Strawberry Truffles
Start by adding the chopped strawberries to a pot on the stove set to low-medium heat. Cook the strawberries for 2-3 minutes, mashing them with a metal potato masher constantly while they cook.

Turn the heat off the stove, then immediately add 3/4 cup of dark chocolate chips to the pot with the mashed strawberries (the residual heat will melt the chocolate chips, which is why it’s important to add them immediately after turning off the heat). Mix well until the chocolate chips are melted.

Transfer the chocolate and strawberry mixture to a bowl, then place it in the fridge for thirty minutes. When the chocolate strawberry mixture has finished chilling, mix it well, then leave it at room temperature for five minutes.
Next you’ll scoop a tablespoon of the mixture and use your hands to roll it into a ball (I recommend wearing kitchen gloves for this step). Place the chocolate strawberry ball on a large plate lined with parchment paper, then repeat with the rest of the chocolate strawberry mixture (you should end up with twelve balls).

Next you’ll melt the remaining 3/4 cup of chocolate chips. You can do this by adding them to a microwave-safe bowl, then heat in the microwave at 20 second increments, stirring every 20 seconds until melted. Or you can melt them in a pot on the stove set to low heat for a few minutes, stirring constantly until melted.

Once the chocolate has melted, add one of the chocolate strawberry balls to the bowl of melted chocolate, then gently stir to coat it completely. Use a fork to lift it out of the melted chocolate, allowing any excess chocolate to drip back into the bowl, then place it on a large plate lined with parchment paper.

Add a sprinkle of freeze-dried strawberry powder on top (optional).

Repeat with the rest of the chocolate strawberry balls.

Place the plate of strawberry chocolate truffles in the fridge to harden for at least 45 minutes before serving.

Or you can melt them in a pot on the stove set to low heat for a few minutes, stirring constantly until melted.
- Once the chocolate has melted, add one of the chocolate strawberry balls to the bowl of melted chocolate, then gently stir to coat it completely.
- Use a fork to lift the chocolate strawberry ball out of the melted chocolate, allowing any excess chocolate to drip back into the bowl, then transfer it to a large plate lined with parchment paper.
- Add a sprinkle of freeze-dried strawberry powder on top (optional).
- Repeat steps 11-13 with the rest of the chocolate strawberry balls.
- Place the plate of truffles in the fridge to harden for at least 45 minutes before serving.
Notes
- Store in the fridge for up to five days or in the freezer them for up to three months. Thaw in the fridge before serving.
