Creamy Chocolate Flaxseed Pudding

This creamy and delicious chocolate flaxseed pudding is so easy to make. Give it a try if you’re looking for nutritious homemade treats, like this flaxseed cake, which is another one of my favorite recipes.

Ingredients and Substitutions

Be sure to use ground flaxseed, not whole flaxseed, for this recipe. Whole flaxseed will not gel properly and won’t create a pudding-like consistency. Ground flaxseed is usually available at grocery stores or health food stores, or you can order it online. If only whole flaxseed is available, you can grind it yourself using a spice grinder or blender.

Cocoa powder gives this pudding its delicious chocolate flavor. Raw cacao powder works too.

I sweetened this pudding with maple syrup, but you can substitute a sugar-free liquid sweetener such as monk fruit, if you prefer a lower-carb option. I recommend increase the milk by 1 tablespoon in that case.

How to Make Flaxseed Pudding

Add the unsweetened milk of choice, ground flaxseed, cocoa powder, maple syrup, vanilla extract, and salt to a blender. Blend until smooth.

Transfer the mixture to a bowl, then refrigerate for at least 4 hours. Stir before serving.

  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

  • Add 1 1/4 cups unsweetened milk of choice, 1/2 cup ground flaxseed, 1/4 cup cocoa powder, 1/4 cup maple syrup, 1 teaspoon vanilla extract, and 1/8 teaspoon salt to a blender.
  • Blend until smooth.
  • Transfer to a bowl, then refrigerate for at least 4 hours.
  • Stir before serving.

  • Store in the fridge for up to three days.
